Raw Kale Salad
One of our personal favorites - wonderful flavors and high in nutrition.
Ingredients:
Ingredients:
- 1 large bunch of fresh organic kale
- juice of 1 lemon or 1 lime
- 1 Tbsp olive oil (helps soften the kale - eliminate for strict adherence to the diet)
- 1 tsp chili powder
- 1/2 to 1 tsp salt or salty seasoning such as Bragg's Liquid Aminos
- Optional: add grated carrots, cucumbers, peppers, or other vegetable you enjoy
Directions:
Rinse and chop kale into small, bite-size pieces. Combine all ingredients in large mixing bowl. With clean hands, massage kale and all ingredients together until kale softens. For best flavor and texture, serve immediately or within a few hours.
